Traditional Turkish Jahnija or Beef Stew

Тhis beef stew is my family’s favorite. It does take some time to cook the meat, but it’s really easy to make. You can put all the vegetables at the beginning, but I want to avoid overcooking the carrots, so I put them in near the end. Perfect choice for lunch, for the whole family!

So this is what you need:

Preparation time: 30 minutes
Cooking time: 3 hours


  • 1 red onion, chopped
  • 500 gr beef, cubed
  • 2 l water
  • salt and black pepper
  • 1 mixed dried vegetables
  • 2 tbsp homemade ketchup (or 1 tbsp tomato puree)
  • 3 potatoes, roughly diced
  • 3 – 4 carrots
  • 1 parsnip
  • 1 garlic clove, minced

How to do it:

Heat some oil in a big pot and fry the onions for a few minutes. Add the beef, water, 1 tsp salt, black pepper, mixed dried vegetables and ketchup. Bring to boil, then cover and let simmer at low temperature.

Cook the meat for an hour, then add potatoes.

After about an hour add the carrots and parsnip and continue cooking the stew covered and on low temperature for another hour, or until the meat is tender and falls apart when pressed with a fork. Add 1–2 tsp salt (to taste) and a minced garlic clove and stir.

Serve the beef stew sprinkled with rosemary and minced garlic clove.
