Creamy, Zesty Spinach Soup

My kids asked for soup today – OK, I admit, it’s a rear occasion! So I googled around and find this creamy recipe (they are not fan of whole vegetable pieces so it had to be creamy and blended), and guess what? It’s green too 🙂
I have to say this spinach soup was delightful and very easy to make!

So here’s the recipe:


  • 1 medium head of cauliflower, broken into florets

  • ½ package of Spinach

  • 2 cups vegetable broth

  • 1.5 cups (or 1 can) of chickpeas

  • 1 clove garlic

  • juice of half a lemon

  • 1 tbs tamari

  • salt and pepper, to taste

  • drizzle of olive oil and lemon juice

How to do it:

Bring a large pot of water to boil. Add cauliflower and boil until tender (7-10 minutes)
Drain cauliflower and transfer to blender. Add all remaining ingredients and blend until smooth.
Transfer back to pot and heat to heat to desired warmth. Serve with garnishes and enjoy!
